If we were having coffee, I would tell you I have had a busy week. My daughter paid us a surprise visit. It was wonderful to see her. We enjoyed some long walks and conversations. This weekend is Easter Sunday, Passover, and the Coachella Music Festival. So, I made an effort to get all the grocery shopping done earlier in the week. We wanted to avoid the crowded stores and restaurants this weekend. My husband really looked forward to my homemade chicken soup with matzo balls. I made the soup from scratch and the matzo balls with the help of a mix. I decided to use some rainbow carrots in the soup, a couple of purple ones. Well, the purple carrots made my chicken broth purple. Everyone commented on the color, but it did not affect the taste.

Well that would be something, purple soup, but I guess it makes sense. Purple is such a strong color. I made potato salad once with a few beets thrown in and the entire thing was bright purple. I don’t think we finished eating it. Glad your soup was OK!

There should be a warning on the package. ‘Only use in recipes with like colors.’ The soup was ok last night but it made me kind of nauseated to look at it today. 😀

I love picking up rainbow carrots from Trader Joe’s or Sprouts. It brightens up any veggie plate.

sounds like a great time. I’ve never had matzo balls, but my dad had talked about making soup with them in it. Maybe I’ll have to try it sometime in his honor.
